To Keep Your Quilting Energy Up….

We couldn’t resist sharing one of our favourite sweet recipes – “Quilter’s Slice” as Annette likes to call it –
Next time you and the girls get together for a quilting morning, take along a tray of Quilter’s Slice to go with the coffee.
(We recommend a practice batch first, so you can do ‘quality control’ at home first, because you won’t be able to stop at just one piece!)
For this super quick and easy, and oh-so-yummy slice, you will need:
1 packet of Arnotts Lattice Biscuits/cookies (If you can’t get these, try a sweet flaky pastry cookie for the base and top)
1 tin of Sweetened Condensed Milk
Juice and zest of 1 lemon
250g / 8 1/2 – 9 oz of Cream Cheese
For the Backing:
Spread out half of the Lattice biscuits, right side down in a lined shallow tray
Wadding: (sorry, Filling)
Soften the Cream Cheese, combine with the Condensed Milk until smooth, then add the lemon juice and zest. Spread this over the layer of biscuits in the tray.
The quilt top (top layer) is simply made by adding the other half of Lattice biscuits right side up, pressing them gently onto the filling.
Place the tray in the fridge until the filling is set, then cut between each biscuit and then in half to make fingers of this yummy “cheesecakey” slice.

Is there a trick to cutting these squares into fingers without squooshing out the filling?
Hi Zelda! They do get squooshy, I know. Try a sharp knife and kind of stab cut it in the middle to crack the biscuit layer. Also works well to cut it in the tray before you take it out.
The good news is – they are super yummy
The bad news is – I have recently heard that Arnotts have discontinued the Lattice Biscuits!
I heard that too Elaine đ You could try baking some puff pastry sheets first, then using them (like a vanilla slice), or try a different plain biscuit instead.
